Goat Cheese & Truffle Crostinis

Goat Cheese & Truffle Crostinis. A perfect pairing with wine.

Friends dropping by? Tapas and wine eve? Pre-dinner appetizer?  This, my friends, is guaranteed to be a hit with your family and friends!

How it Came to Be:

On a trip to Nice, France, while exploring nearby villages on day trips, my husband and I discovered our mini-paradise in truffle mousse. We brought several jars home from the trip. We were deeply saddened when our stash ran out.
In attempts to re-create this favourite truffle mousse, I experimented with a variety of soft cheeses and truffle oils from our local Italian Centre.
What evolved over time is this beauty. Such an easy appetizer that is guaranteed to be loved by all!

Serves 8 generously!

  • 150 g softened goat cheese:  (I often use Boursin goat cheese as they offer a variety of flavours that enhance this recipe.)
  • Extra virgin olive oil infused with truffle
  • Crostini: 5 to 6 thin sliced multigrain bread, crust removed and quartered
  • Dill flecks for topping colour (optional)

Cooking Instructions:

  1. Preheat oven on Broil setting
  2. In a bowl soften goat cheese with fork.
  3. Add enough truffle oil to make an easily spreadable paste.
  4. Spread paste liberally and evenly onto crostini pieces of quartered bread.
  5. Place prepared goat cheese truffle crostinis on a medium rack of Broil setting in preheated oven.
  6. Carefully keep watch of crostinis until they bubble slightly, but don’t brown. It happens quickly!
  7. Sprinkle dill flakes for colour.
  8. Serve hot.

Recipe Notes:

  • The recipe can be easily doubled.
  • Refrigerate unused spread and soften at room temperature to use again on fresh crostini.
  • I’ve also served these crostinis alongside lunch and dinner salads.
